My daughter, Lola, requested a lemon meringue pie for her birthday. I’d never made a lemon meringue pie before — in fact, I’d never eaten a lemon meringue pie before. I was a coconut meringue pie kid.

I figured that being fairly experienced with making meringue and pastry, I could make the lemon custard happen.

So yesterday, early afternoon, I laid out my mixing bowls, ingredients, and recipe and got to work.

I worked slowly and deliberately.

First the crust. Then, the custard. Then, the meringue. Until everything was in its place in the pie tin. I popped the pie into the oven and waited for the crust of the meringue to caramelize.

After a veggie taco bar feast, I sliced into the pie. Was it set? Was it soggy? Did it taste good?

Well, I am happy to report that my first lemon meringue pie set beautifully, avoided being soggy, and tasted divine.

I snapped a few pictures and sent them to my mom.
